Traditional limoncello

Ingredients
- 5 lemons, flabedo only
- 750 ml of vodka
- 500 ml of water
- 500 g of honey (or sugar)
NOTE: You will need a jar with rubber seal.
Directions
- Peel the skin of each lemon. Only the flavedo, the color part of the skin, no the white part.
- Place the skin into a glass jar and add the vodka.
- Store in a dark place between 20°C and 28°C for 30 days.
- After rest, continue to the next step.
- This step is optional, but it will kill any bacteria to avoid post- fermentation. Add the water into a pot and bring it to a boil. Once boiling, add the honey or sugar and heat over medium/low heat until it has completely disolved and let it cool down to room temperature.
- strain the lemon alcohol into the sugar and discard the peels.
- Mix together to make the limoncello.
- Transfer it into a bottle and in the fridge or the freezer.
- Serve the limoncello in chilled glasses.
