Traditional limoncello

Ingredients

  • 5 lemons, flabedo only
  • 750 ml of vodka
  • 500 ml of water
  • 500 g of honey (or sugar)

NOTE: You will need a jar with rubber seal.

Directions

  1. Peel the skin of each lemon. Only the flavedo, the color part of the skin, no the white part.
  2. Place the skin into a glass jar and add the vodka.
  3. Store in a dark place between 20°C and 28°C for 30 days.
  4. After rest, continue to the next step.
  5. This step is optional, but it will kill any bacteria to avoid post- fermentation. Add the water into a pot and bring it to a boil. Once boiling, add the honey or sugar and heat over medium/low heat until it has completely disolved and let it cool down to room temperature.
  6. strain the lemon alcohol into the sugar and discard the peels.
  7. Mix together to make the limoncello.
  8. Transfer it into a bottle and in the fridge or the freezer.
  9. Serve the limoncello in chilled glasses.
